Copycat Chick-fil-A Lemonade (Sugar Free! No Splenda!)

Chick-fil-A lemonade is incredible any time of year, but really hits different on the sizzling hot days of spring and summer. The perfect combo of sweet and tart to tantalize your taste buds, cool you down, and brighten your day!
But let’s talk about CFA diet lemonade for a sec - I am NOT a fan of Splenda. It has an odd chemical flavor that I’ve never been able to get past. The amazing thing about this recipe: I used a plant-based sweetener with no chemical flavors and no aftertaste! A simple recipe that only requires 3 ingredients and a few minutes. The result is an amazingly sugar-free refreshment that rivals the iconic Chick-fil-A lemonade!

Ingredients
1 cup Swerve granular sweetener
1 ½ cups fresh-squeezed lemon juice (I usually get 1 ½ cups of juice from a 2 lb. bag of organic lemons, but occasionally - out of season - it takes 2 ½ to 3 pounds of lemons)
3 cups filtered water, divided
3 cups ice
Instructions
1. Wash lemons
2. Heat 1 cup of the filtered water and the Swerve sweetener in a saucepan over medium heat, stirring occasionally, until sweetener is dissolved and there is no more graininess on the back of a spoon (you've just made a simple syrup!)
3. Set simple syrup aside to cool
4. Cut lemons in half and juice them over a filter or sieve until you have the required amount of lemon juice (a little more or less is fine!)
5. Pour ice, lemon juice, remaining filtered water, and cooled simple syrup mix into a pitcher
6. Stir all ingredients together until well combined
7. Let ice melt into lemonade - this cools the lemonade down quickly and the melted ice serves as additional water to make sure the flavor is right. If serving immediately, you will need to add an additional 1 cup of water at this point.
8. Taste the lemonade and adjust the tartness to your liking by adding more water if needed 9. Serve over ice and garnish with lemons and/or fresh mint
