Pressure Cooker Black Beans

This recipe is so accessible: simple, affordable, and environmentally friendly to boot! This recipe makes 10-12 servings, perfect for large families or meal prep!
I designed this recipe using a Ninja Foodi, but it will work just as well in an Instant Pot or a similar pressure cooker.

Ingredients
1 Tbsp. olive oil or vegetable oil
1 medium yellow onion, finely diced
3 cloves garlic, grated, fresh or prepared (such as minced garlic or garlic paste)
1 lb. dried black beans
5 cups filtered water
2 tsp Better Than Bouillon Roasted Chicken Base
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp onion powder
½ tsp cumin
Optional but highly recommended:
1 tsp crushed red pepper flakes
⅛ tsp cayenne pepper (more if you love heat!)
Instructions
1. Finely dice the onions and garlic
2. Set a pressure cooker to the sear or sauté function on medium-high heat
3. Preheat the oil until shimmery, about 2-3 minutes
4. Sauté the onions until translucent, about 5 minutes, stirring occasionally
5. While the onions are cooking, remove the stones from the beans and make sure there are no clumps of dirt or debris
6. Add garlic to the onions and sauté for 50-60 seconds until fragrant
7. Immediately add the water to prevent the garlic from burning, then add the remaining ingredients: beans, spices, and Better Than Bouillon, and stir until well combined
8. Close the lid and set the vent to seal
9. Pressure cook the beans for 45 minutes
10. Allow the pressure to release naturally for 15 minutes
11. Carefully release the remaining pressure manually by opening the vent seal
12. Serve immediately or allow to cool for 1 hour before storing in the refrigerator
